Beer Battered Fish with Sweet Potato Chips

Description

Fresh Sea Bass coated in a crispy flavoured homemade spicy beer batter served with sweet potato chips

Serves: 3-6

Prep time: 20 minutes 

Cooking time: 30 minutes 

 

Ingredients

Fish batter: 

​

450g plain flour 

3 tbsp baking powder 

600 ml cold beer

1tbsp cayenne pepper

​

Fish seasoning:

​

6 Sea bass fillets (other types of fish can be used)

1/4 tsp ground black pepper 

1/4 tsp salt

1/4  tsp paprika 

100g plain flour 

​

Sweet potato chips:

​

4 sweet potatoes 

2 tsp smoked paprika 

1 tsp salt

1 tsp ground black pepper

1/2 tsp ground cumin 

1 tsp cayenne pepper

2 garlic cloves, crushed

1. Add all the fish batter ingredients to a bowl and mix together well using a whisk 

​

2. To each fish fillet add  ground black pepper, salt and paprika on both sides. Coat each fish fillet with some plain flour 

​

3. Dip each fish fillet in the batter mix and then fry in a deep fat fryer at 190 degrees Celsius for 4 minutes. Repeat for the other fish fillets 

​

4. Peel and cut the sweet potatoes into thin strips. Place in a bowl then add the spices to the potatoes then mix together well with your hands 

​

5. Add half the batch to the deep fat fryer at 190 degrees Celsius and fry for 7 minutes. Remove from fryer and repeat with the second batch.
