Tasty Breakfast Burger 

Description

A tasty and healthy breakfast burger consisting of  scrambled eggs mixed with an array of fresh vegetables and spices, served in fresh burger bun

Serves: 2-3

 

Prep time: 10 

Cooking time: 10 minutes

 

 

 

Ingredients

3 medium eggs

1/2 tsp salt

1/8 tsp ground black pepper

1/4 tsp paprika

1/4 tsp ground cumin 

1 garlic clove, crushed 

1 small onion, chopped 

2 tomatoes, chopped 

1 fresh green chilli, chopped

2 large mushrooms, chopped 

handful of parsley, finely chopped 

1 small carrot, peeled and grated 

Drizzle of olive oil 

2-3 burger buns

Instructions

1.Crack the eggs in a bowl, add the salt and spices then whisk together well

​

2. To a frying pan on high heat add a drizzle of olive oil. Add in the onions and mushrooms then fry for 1 minute 

​

3. Add the rest of the vegetables, green chilli and garlic. Stir often whilst frying for 2 minutes

​

4. Add in the whisked egg, and use a spatula to break up the cooking eggs. Cook until all the egg has scrambled

​

5. Served hot on fresh burger buns
