Bacon & Veggie
A tasty bacon, spring onion, bell pepper and tomato stir fry wrapped in a delicious egg omelette

3-4 spring onions, chopped
1 tomato, chopped
1/2 small bell pepper, chopped
3 strips of bacon, chopped
1/4 tsp season all
3 medium eggs
salt to taste
vegetable or olive oil
Omelette Wrap Goes Great With
1.To a frying pan heated to medium heat with 2 tbsp vegetable oil add the bacon. Fry for 2 minutes then add the spring onions and season all.
2. Fry together for 1 minute before adding the bell pepper and tomato. Fry for 5 minutes with frequent mixing. Remove from heat and dish onto a plate.
3. In a bowl, crack the eggs and add salt to taste. Whisk, then fry in a frying pan heated to medium heat. Fry until the edges of omelette begin to curl then flip over, then fry for 1 minute.
4. Serve onto a plate. Add some of the bacon stir fry about 2 cm way from one end of the omelette. Then roll the omlette to form a wrap.
5. Any extra bacon stir fry can be used as a side dish or to make another omelette wrap.
