Homemade Italian Gelato 


Authentic Italian gelato recipe made at home. Recipe suitable for various gelato flavours



Serves: 4-6


Prep time: 15 mins

Set time: Overnight  




1 cup whole milk

1 cup sugar 

5 egg yolks 

3/4 cup of your desired filling (in paste, powder or liquid form)

2 cups whipping cream

For lemon gelato filling you need:

3 tbsp lemon peel, grated

3/4 cup lemon juice

1. Add the egg yolks and sugar together in a food mixer and whisk together until smooth 

2. Add the milk and cream in a saucepan. Heat under medium heat until small bubbles start to form on the surface 

3. Pour a small amount of the heated milk mixture to the egg mixture, then immediately whisk together quickly by hand 

4. Pour the mixture to the remaining milk mixture in the saucepan 

5. If you are making lemon gelato, add the grated lemon peel and lemon juice to the saucepan.

(for other gelato flavours add your desired flavouring to the saucepan at this point) 


6. Stir the mixture on medium heat until it begins to thicken slightly (this should take around 10 mins), then pour the entire mixture into an empty container


7. Place the container in the freezer for 30 mins

8. Remove the gelato from the freezer then whisk for 2 mins

9. Repeat steps 7 and 8 five more times, then cover the surface of the gelato with clingfilm. Cool the gelato overnight in the freezer 

10. Before serving, remove the gelato from the freezer and leave to warm at room temperature for 10 mins
